Apple Cobbler

 

serves 15

8 c. apples, peeled & sliced
(use a combination of Fuji, Jonathan,
and Golden Delicious)
cinnamon & nutmeg
1 stick butter or margarine
1 1/2 c. sugar
2 c. flour
2 tsp. baking powder
1/2 tsp. salt
1 c. milk
1 1/2 c. sugar
2 T. cornstarch
1/2 tsp. salt
2 c. boiling water

 

Place apples in greased 9x13 pan. Sprinkle with spices.

Cream butter and sugar. Mix next 3 ingredients and add alternately with milk. Pour over apples.

Mix next 3 ingredients and sprinkle over apples. Pour boiling water over all.

Bake @ 350 for 1 hour.


 

Apple Crumb Pie

 

1 pie shell

5 C. apples, peeled & chopped
(Macoun, Macintosh and Cortland)
1/2 C. sugar
1 T. cinnamon
1/2 C. sugar
3/4 C. flour
1/3 C. soft butter

 

Place apples into pie shell. Sprinkle with sugar and cinnamon.

Mix last ingredients until crumbly and sprinkle onto pie.

Bake @ 400 for 40 minutes.


 

Easy Apple Cake

 

serves 8

1 C. flour
1 C. sugar
1/2 C. butter, melted
1 egg
1/2 C. chopped nuts
2 med. Granny Smith apples,
peeled & sliced
1/2 tsp. baking powder
1/4 tsp. salt
1/2 tsp. baking soda
1 tsp. cinnamon

 

Mix dry ingredients together first, then add remaining ingredients until just moistened.

Pour into an 8” square greased pan.

Bake @ 350 for 35 - 40 minutes.


 

Apple Raisin Bread Pudding

 

serves 12

Pudding: Sauce:  
1 c. milk
1/4 c. brown sugar
5 c. bread pieces
1/2 c. raisins
2 c. sliced apples
1 c. milk
3 eggs
1/3 c. sugar
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1 tsp. vanilla
1/2 c. cream
1/2 c. maple syrup
1/8 tsp. cinnamon
2/3 T. cornstarch
1/4 c. water
 
 

In 8x8 pan combine milk and brown sugar. Add bread and let set 15 minutes. Stir so all bread gets soft. Add raisins and apples.

Combine remaining pudding ingredients and pour over bread mixture. Stir well.

Bake @ 350 for 55-65 minutes until set.

For sauce, combine first 3 ingredients and heat in saucepan. Mix cornstarch and water and add. Boil for 1 minute. Spoon warm sauce over each serving of pudding.


 

Caramel Apple Cake

 

serves 15

1 1/2 c. oil
3 eggs
2 c. sugar
2 tsp. vanilla
3 c. flour
1 tsp. baking soda
1 tsp. salt
1 1/2 c. chopped pecans
3 c. peeled diced apples
1/2 c. brown sugar
1/4 c. milk
1 stick butter

 

Mix first 4 ingredients. Mix next 3 then add. Fold in pecans and apples. Pour into greased bundt pan.

Bake @ 350 for 1 hour and 20 minutes.

Boil last 3 ingredients for 3 minutes. Remove cake from pan and let cool slightly. Drizzle caramel over cake.


 

Apple Scrumptious

 

serves 12

1 1/2 sticks butter
1 c. sugar
2 c. flour
1/8 tsp. salt
1 beaten egg
6 c. Jonathan or Cortland apples,
peeled and sliced
3/4 c. sugar
1 tsp. cinnamon

 

Mix first 5 ingredients. Press half of mixture into greased 9x13 pan.

Mix next 3 ingredients and spread on crust.

Pat remaining dough over apples by forming small balls and flattening into rounds on apples.

Bake @ 375 for 35 minutes.

Drizzle with powdered sugar icing.


 

German Apple Crumb Cake

 

serves 12

1 1/2 c. flour
1/2 c. sugar
dash of salt
1 stick soft butter
5-6 c. sliced apples (use assorted baking
apples, such as Crispin, Ida Red, and Cortland)
2 T. tapioca
3/4 tsp. cinnamon
1/4 tsp. nutmeg
1/2 c. sugar

 

Mix first 4 ingredients until crumbly. Reserve 3/4 c. of crumbs and press the rest in greased 9x13 pan.

Combine next 5 ingredients and spread over crust.

Bake @ 425 for 20 minutes. Sprinkle with reserved crumbs and bake 25-30 minutes more.


 

Cranberry Apple Crisp

 

serves 8

3 c. peeled chopped apples
(Granny Smith and Macoun)
3 c. cranberries
1 c. sugar
3 T. flour
1 1/2 c. quick oats
1/2 c. flour
1/2 c. brown sugar
1 stick butter, melted
1/4 c. chopped nuts

 

Combine first 4 ingredients and pour into greased 8x8 pan.

Mix remaining ingredients until crumbly and sprinkle on top.

Bake @ 350 for 50-55 minutes.
